Prep: 10 minutes
Fermentation: 7ā8 days
š Ingredients
1Ā cup rye flour
3ā4 cups warm water
2ā3 cloves garlic
2 bay leaves
3ā5 allspice berries
1Ā slice rustic bread (optional)

Day 1
Mix everything in a glass jar.
Cover loosely and place in a warm spot.
Days 2ā6
Stir once daily.
Watch as it slowly comes to life.
Days 7ā8
